cranberry apple walnut cake

from one of the Moosewood cookbooks, I'm not sure which.

preheat oven to 350F, grease and flour a 9x13-inch cake pan or bundt pan.
cream together in a large bowl:
  • 1/2 c. vegetable oil
  • 1 c. packed brown sugar
add and beat well:
  • 2 eggs
  • 1 tsp vanilla
sift together:
  • 2 c. whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp salt
add dry ingredients to wet, combine thoroughly.  stir in:
  • 2 c. sliced or grated apples
  • 1/2 lb. cranberries
  • 1/2 c. chopped walnuts
bake until done, 45-50 minutes for sheet cake, or 55-65 min for bundt.
