Sift into a large bowl:
- 2 c. flour (I used only all-purpose, and wouldn't try less than half so they're not too dense)
- 1/3 c. refined sugar
- 1/3 c. brown sugar
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1/4 tsp salt
- 4 medium carrots, shredded (2 c.)
- 1 large apple, peeled cored and shredded (1 c.)
- 1/2 c. raisins
- 1/2 c. chopped walnuts
- 1/2 c. sweetened dried coconut flakes
- 3 eggs
- 1 c. vegetable oil
- 2 tsp. vanilla extract
I have to comment that these are AMAZING. Let's make more ASAP.
